So meatloaf is the 1st dish I made as a married woman…why?! Because it’s so easy and men love meat right?! Well as much as I like making them, I hate how much we waste and It seems like too much meat. Thankfully, I found this nice portion control recipe (http://www.stockpilingmoms.com/2012/04/pinterest-pin-of-the-day-meatloaf-in-a-muffin-tin/) and incorporated another person’s incredible meatloaf recipe! Brown SUGAR YUMMM (http://www.stockpilingmoms.com/2013/02/brown-sugar-meatloaf/). If you don’t like that, then just go back to the basics but follow my recipe to see how quickly and easy it is to make!
½ cup of brown sugar
1 cup ketchup
1 tablespoon Worcestershire sauce
1½ pounds of ground beef chuck (I used ground turkey)
2 cloves of garlic, minced
1 tablespoon of Worcestershire sauce
½ cup milk
2 large eggs
1½ teaspoons of salt
¼ teaspoon of ground black pepper
1 package of dry onion soup mix (I didn’t have any, but used dry ranch mix…gotta use what you got!)
¼ teaspoon of ground ginger
¾ cups of Italian bread crumbs (or plain)
Preheat oven to 400°
In a small bowl, combine sugar, ketchup, and 1 tablespoon of Worcestershire sauce.
In a large bowl, combine garlic, Worcestershire sauce, milk, eggs, salt, pepper, soup mix, ginger, and bread crumbs and ¹/³ of the sugar/ketchup mixture. Add your ground meat and mix it up!
Then put ¹/³ of the mixture at the bottom of every muffin spot, layer with the meat mixture, then top them all off with the remaining ¹/³ sugar/ketchup mixture.
